Recipe
This recipe serves 4 to 6 individuals. The cooking time is 45 minutes.
Ingredients
Porcini mushrooms (dried) ¾ ounces
Hot water 1 cup
Butter (unsalted) 3 tablespoons
Mixed mushrooms 1 ½ pounds
Minced garlic cloves 2 large
Salt To taste
Pepper To taste
Fresh pasta (linguine or fettuccine) 1 pound
Fresh parsley (shopped) ¼ cup
Ingredients for serving
Black truffles (fresh) 2-3
Truffle paste Dollop
Truffle oil a teaspoon
Instructions
Take a large pot of water and bring it to a boil. Add the dried porcini water to the boiling warm water and allow it to rehydrate for about thirty minutes. Take the porcini out of the water preserving the liquid. Dispose off all the liquid while keeping ¼ cup aside. Chop porcini and keep it aside.
In the meanwhile, take a large pan and place it over heat. Add olive oil and butter to it. Now add fresh mushrooms and sauté them until all the liquid inside them is released and they start turning a beautiful brown. Now add porcini and garlic and cook for another thirty seconds. Add pepper and salt to taste. Add the parsley that has been chopped and mix it.
Take a large pot generously filled with salted water. Cook the noodles according to the instructions provided on the packet. This only takes a few minutes. When the noodles are tender, drain the water and transfer them to the pan with the mixture of mushrooms. Mix it well such that all the ingredients are well blended with the noodles. Put the pan on a medium flame now and cook for a few minutes. You can add a little liquid from the porcini mushrooms in case the noodles look dry.
For serving, take bowls and it is strongly recommended that you serve the pasta piping hot. You can use the truffle paste for garnishing. To further accentuate the flavors of black truffles, you can add a little truffle oil on top in the end as well.
