Truffled Deviled Eggs

Using hard-boiled egg yolks that are mashed with ingredients like chives, lemon juice, truffle oil and mayonnaise, truffled deviled eggs are made with egg whites topped with black truffles.

The total time it takes to make them is about 45 minutes and this recipe will serve 8 to 10 individuals.
Eggs 12
Mayonnaise 6 teaspoons
Dijon mustard 2 teaspoons
Black truffle oil 2 teaspoons
Lemon juice (freshly squeezed) 2 teaspoons
Chives( fresh and finely chopped) 2 teaspoons
Kosher salt To taste
Black pepper (freshly ground) To taste
Black truffles (thinly sliced for garnishing) To taste


Take a large pot and place all the eggs into it. Add tap water and make sure that the level of water is about 1 inch above the eggs. Bring the pot to a boil till the eggs are hard. Now take the pot off the heat and cover it. Now cool them down by allowing the eggs to sit at room temperature for precisely 13 minutes. When they have cooled down a bit, uncover the pot and run cold water over the eggs in case you wish to eat them right away or refrigerate them if you plan to use them sometime later. Peel the shell and cut them into halves. Remove the egg yolks carefully while preserving the whites. Keep the whites aside. Now take a medium-sized bowl and place the egg yolks in it. Now add mustard, lemon juice, truffle oil, chives and mayonnaise in the bowl. The bowl should be non reactive. Now add salt and black pepper to the mixture. Mix all the ingredients well so that everything is blended together well and the mixture achieves an even texture. Keep whipping until the mixture is fluffy. Now place the egg white halves carefully on a plate. Take a spoon and evenly pipe the mixture in the reserved halves of egg whites. When done, you can do garnishing with thinly sliced black truffles. If you wish to add a different flavor, you can also go for chervil leaves, which prove to be a great substitute for garnishing.
