Penne Rigate 8 pounds
Oil of black truffles 1 tablespoon
Minced Shallots 2 tablespoons
Minced smoked bacon 3 pounds
Minced garlic 1 tablespoon
Olive oil 2 tablespoons
Flour 2 tablespoons
Heavy cream 1 ½ cups
Minced basil 1 tablespooon
Minced thyme ¼ thyme
Kosher salt ¼ teaspoon
Black pepper ¼ teaspoon
Cheddar cheese (sharp and shredded) 3 cups
Pecan ½ cup
Smoked Shredded cheddar (medium) 1 cup

Instructions

Heat the oven at 350⁰F. Take a large pot and add a gallon of water to it. Bring it to a boil. Add pasta to the boiling water and whisk continuously. Boil for a total of 5 to 6 minutes. At this point, the pasta should be a little hard (slightly undercooked). Take a sieve and drain all the water through it. Let the pasta rest for a minute. Transfer the pasta to a bowl with truffle oil and keep it aside. Take another saucepan and add bacon, olive oil, shallot and garlic to it. Fry it for ten minutes at low flame. Increase heat after adding flour and cook for two minutes while whisking it continuously. Add heavy cream and boil it. Reduce the heat and allow it to simmer for 10 minutes. Add the seasonings and herbs. Mix 3 cups of sharp cheddar cheese until a smooth texture is achieved. Now add the pasta with scent of truffle and mix well so that it is heavily combined. Divide the mixture equally into baking dishes. Arrange pecans and shredded cheddar on top. Bake for 5 to 10 minutes until the top is browned. Serve hot.
